Description
A homemade, dairy-free copycat of the Starbucks Pink Drink that is vibrant, creamy, and refreshing. Made with freeze-dried strawberries, coconut milk, and green coffee fruit juice, this drink is ready in under 10 minutes and costs less than $3 per serving.
Ingredients
- 1/4 cup (25g) freeze-dried strawberries
- 1 cup (240ml) water
- 1–2 tablespoons honey or agave nectar
- 1 cup (240ml) light coconut milk (carton, chilled)
- 1/2 cup (120ml) chilled green coffee fruit juice (or passion fruit/pineapple juice mix)
- Ice cubes
- Extra freeze-dried strawberries for garnish
- Lime wedge (optional)
Instructions
- Combine water and freeze-dried strawberries in a small saucepan. Bring to a gentle boil over medium heat.
- Reduce heat to low and simmer for 2 minutes until the water turns vibrant pink.
- Remove from heat and let cool for 5 minutes.
- Strain the mixture through a fine-mesh strainer into a bowl or measuring cup to remove strawberry pieces. Reserve 1/2 cup of the pink liquid.
- Stir honey or agave into the 1/2 cup of strawberry liquid until dissolved to create a syrup.
- Fill a tall glass with ice cubes.
- Pour in the chilled coconut milk, green coffee fruit juice, and strawberry syrup.
- Blend for 10 seconds or stir vigorously to combine.
- Garnish with extra freeze-dried strawberries and a lime wedge if desired. Serve immediately.
Notes
Use light coconut milk from a carton, not canned, for a drinkable consistency. If green coffee fruit juice is unavailable, substitute with passion fruit juice mixed with pineapple juice or apple juice. For parties, make strawberry ice cubes to prevent dilution. The strawberry syrup can be stored in the fridge for up to 5 days, but assemble the drink fresh to prevent separation.
