  • 3/4 cup (180ml) whole milk or buttermilk
  • 1 cup (240ml) heavy cream, cold
  • 1 teaspoon vanilla extract
  • Optional: 2 tablespoons (15g) powdered sugar
  • Optional: splash of lemon juice
  • Optional: 1 teaspoon lemon zest

Instructions

  1. Step 1: Wash and hull the strawberries, slice into halves or quarters. Toss with 2 tablespoons granulated sugar and optional lemon juice. Let sit at room temperature for 10 minutes to macerate.
  2. Step 2: Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper. In a large bowl, whisk together flour, remaining 1 tablespoon sugar, baking powder, and salt. Cut in cold butter with a pastry cutter or forks until mixture resembles coarse crumbs with pea-sized bits.
  3. Step 3: Pour in milk or buttermilk and stir just until dough comes together. Do not overmix.
  4. Step 4: Turn dough onto a floured surface and pat into a 1-inch thick rectangle. Cut out rounds using a 2.5-inch biscuit cutter or glass rim. Place on baking sheet. Brush tops with milk or cream and sprinkle with a pinch of sugar.
