Instructions

  1. Butter each ramekin generously and dust lightly with cocoa powder or flour. Set aside.
  2. Melt the butter with dark, milk, and white chocolate together in a microwave-safe bowl or double boiler, stirring every 20 seconds until smooth and glossy. Let cool slightly.
  3. In a separate bowl, whisk eggs, sugar, vanilla extract, salt, and espresso powder (if using) until pale and slightly frothy.
  4. Slowly pour the melted chocolate mixture into the egg mixture while whisking constantly to prevent cooking the eggs.
