Ingredients

  • 2 large ripe mangoes, peeled and cubed (about 400g or 2 cups)
  • 1.5 cups coconut water
  • 2 tablespoons chia seeds
  • 1 tablespoon fresh lime juice
  • 12 teaspoons honey or maple syrup (optional)
  • 45 fresh mint leaves
  • 1/2 cup ice cubes (only if using fresh mango)
  • Extra chia seeds for garnish
  • Mint sprig for garnish
  • Lime wedge for garnish

Instructions

  1. Prep the mango: If using fresh mangoes, peel and cube them. If using frozen mango, measure out 2 cups and let sit for 5 minutes to soften slightly.
  2. Blend the base: Add mango, coconut water, lime juice, honey (if using), and mint leaves to a blender. Blend on high for 30-60 seconds until completely smooth.
  3. Add chia seeds: Pour chia seeds into the blended mixture and stir vigorously with a spoon to ensure even distribution and prevent clumping.
  4. Let sit: Allow the mixture to sit for at least 10 minutes (or up to 30-60 minutes) so the chia seeds absorb liquid and swell.
  5. Stir and serve: Give the drink a good stir again before serving. Pour into glasses over ice (if using fresh mango) and garnish with mint and lime.

Notes

Use frozen mango for a thicker, slushier texture without diluting with ice. Stir chia seeds vigorously to prevent clumping. The drink can be made up to 24 hours ahead; add extra liquid before serving if it thickens too much. Do not freeze, as chia seeds may alter texture upon thawing.
