  • 3 tablespoons (15g) unsweetened cocoa powder
  • 23 tablespoons (30-45ml) maple syrup
  • 1 teaspoon (5ml) vanilla extract
  • 1/2 teaspoon (3g) salt
  • 2 tablespoons (30ml) heavy cream or coconut cream
  • 1/2 can (120ml) full-fat coconut cream (chilled)
  • 1 tablespoon (5g) cocoa powder (for topping)
  • 1 tablespoon (8g) powdered sugar (optional, for topping)
  • 1/2 teaspoon (2.5ml) vanilla extract (for topping)
  • Dark chocolate shavings or cocoa nibs (for garnish)

Instructions

  1. Ensure cottage cheese is at room temperature for smoother blending. If in a rush, microwave for 15 seconds.
  2. Add cottage cheese, cocoa powder, maple syrup, vanilla, salt, and heavy cream (if using) to a high-speed blender.
  3. Blend on low, then increase to high speed for 45-60 seconds. Stop to scrape down sides, then blend for another 30 seconds until completely smooth with no visible curds.
  4. Taste the mixture and adjust sweetness or chocolate intensity if needed.
  5. In a chilled bowl, whip the solid coconut cream (or heavy cream) with cocoa powder, powdered sugar (if using), and vanilla using an electric mixer on medium-high speed for 2-3 minutes until stiff peaks form.
  6. Spoon a layer of chocolate mousse into serving glasses or jars.
  7. Dollop cocoa whip on top of the mousse. Swirl or layer as desired.
  8. Garnish with chocolate shavings or cocoa nibs.
  9. Refrigerate for at least 30 minutes to set before serving.

Notes

For the best texture, blend the cottage cheese until absolutely smooth. Use full-fat cottage cheese for a richer result. If using coconut cream for the whip, ensure the bowl is chilled in the freezer for 10 minutes beforehand to help it whip properly. This mousse keeps in the fridge for up to 4 days.
