An incredibly smooth, no-bake strawberry cheesecake that requires zero oven time. This foolproof recipe uses simple ingredients to create a restaurant-quality dessert with a graham cracker crust and a light, airy filling.

- 1 ½ cups (150g) graham cracker crumbs
- 6 tablespoons (85g) unsalted butter, melted
- 2 tablespoons (25g) granulated sugar
- ¼ teaspoon salt
- 16 oz (450g) full-fat cream cheese, softened
- 1 ½ cups (360ml) heavy whipping cream, cold
- 1 cup (100g) confectioners’ sugar
- 2 teaspoons vanilla extract
- 1 tablespoon lemon juice
- 1 ½ cups (200g) fresh strawberries, hulled
- 2 tablespoons (25g) granulated sugar (for macerating)
- 1 teaspoon lemon zest
Instructions
- Combine graham cracker crumbs, melted butter, 2 tablespoons sugar, and salt in a medium bowl. Stir until it resembles wet sand.
- Press the crust mixture firmly into the bottom of a 9-inch springform pan. Refrigerate while making the filling.
- In a large bowl, beat the softened cream cheese on medium-high speed until completely smooth. Scrape down sides and beat for another minute.
- Add confectioners’ sugar, vanilla extract, and lemon juice to the cream cheese. Beat until combined and smooth.
- In a separate cold bowl, whip the heavy cream on high speed until stiff peaks form.
- Add one-third of the whipped cream to the cream cheese mixture and stir to lighten. Gently fold in the remaining cream using a spatula until just combined.
- Hull and chop strawberries. Toss with 2 tablespoons sugar and lemon zest. Let sit for 10 minutes, then drain most of the liquid.
- Blend half of the strawberries into a puree. Chop the remaining half into small chunks.
- Pour half of the cream cheese mixture over the crust. Drizzle half of the strawberry puree and swirl with a knife.
- Add remaining cream cheese mixture. Top with chopped strawberries and remaining puree. Swirl again.
- Cover with plastic wrap and refrigerate for at least 4 hours, or overnight, until set.
Notes
Ensure cream cheese is fully softened to avoid lumps. Chill the bowl and beaters for whipping cream for better results. Drain strawberry juice thoroughly to prevent a runny filling. Use a hot knife for clean slices.
