Description

A no-bake dessert featuring layers of graham crackers and ultra-creamy whipped cream infused with coconut and drained crushed pineapple. It requires no oven and is best served chilled overnight for the perfect texture.

  • 1 package (20-24 squares) honey-flavored graham crackers
  • 2 cups (480ml) heavy whipping cream, cold
  • ½ cup (60g) confectioners’ sugar
  • 1 teaspoon vanilla extract
  • 1 can (20 oz / 565g) crushed pineapple in juice, well drained
  • ½ cup (120ml) coconut cream
  • ½ cup shredded coconut, toasted
  • Optional: ½ cup chopped macadamia nuts
  • Optional: ½ teaspoon rum extract

Instructions

  1. Drain the crushed pineapple in a colander for at least 15-30 minutes, pressing down to remove excess liquid.
  2. In a large mixing bowl, combine cold heavy cream, confectioners’ sugar, and vanilla extract. Whip on medium-high speed until stiff peaks form.
  3. Gently fold the coconut cream into the whipped cream using a spatula until just combined.
  4. Gently fold the drained pineapple into the coconut-whipped cream mixture.
  5. Create the first layer of graham crackers in a 9×13 inch dish, breaking pieces to fit edges if necessary.
  6. Spread half of the pineapple-coconut cream mixture over the crackers.
  7. Add a second layer of graham crackers, followed by the remaining cream mixture.
  8. Top with a third layer of graham crackers.
  9. Cover the dish and refrigerate for at least 4 hours, preferably overnight, to allow crackers to soften.
  10. Before serving, sprinkle with toasted shredded coconut and optional macadamia nuts. Slice and serve cold.

Notes

Ensure the pineapple is drained thoroughly to prevent a watery cake. Keep all cream ingredients cold for best whipping results. The cake must chill for at least 4 hours, but overnight is recommended for the best texture. Do not freeze, as the texture will suffer upon thawing.
