Description
A quick and indulgent weeknight dinner featuring seared salmon fillets in a rich garlic parmesan cream sauce with sun-dried tomatoes and fresh spinach. Ready in just 15 minutes with minimal cleanup.

- 4 salmon fillets (about 6oz each)
- 1 tsp salt
- ½ tsp black pepper
- ½ tsp garlic powder
- ½ tsp paprika (optional)
- 2 tablespoons olive oil
- 2 tablespoons butter (unsalted)
- 4 cloves garlic, minced
- ½ cup sun-dried tomatoes, chopped (packed in oil)
- 1 cup heavy cream (full-fat)
- ¼ cup chicken broth (low-sodium)
- ½ cup Parmesan cheese, freshly grated
- 3 cups fresh spinach (or frozen, thawed and squeezed dry)
- 2 tablespoons fresh basil, chopped
- ½ teaspoon red pepper flakes (optional)
Instructions
- Pat salmon fillets dry with paper towels and season both sides with salt, pepper, garlic powder, and paprika.
- Heat olive oil in a large skillet over medium-high heat. Sear salmon for 3-4 minutes until golden, flip, and cook for 1-2 minutes more. Remove salmon from pan and set aside.
- Reduce heat to medium. Add butter to the same skillet. Once melted, add minced garlic and chopped sun-dried tomatoes. Sauté for 1-2 minutes until fragrant.
- Pour in chicken broth and simmer for 1 minute, scraping up brown bits from the bottom of the pan.
- Add heavy cream and simmer gently for 2-3 minutes until the sauce thickens slightly.
- Remove pan from heat. Stir in Parmesan cheese until melted and smooth. Add spinach and stir until wilted. Add basil and red pepper flakes.
- Return salmon to the skillet, nestling it into the sauce. Spoon extra sauce over the fish and let sit for 1 minute to heat through.
- Serve immediately, garnished with extra basil and parmesan.
Notes
Do not overcook the salmon in the pan as it will continue to cook in the sauce. Squeeze water out of frozen spinach to prevent a watery sauce. Use the oil from the sun-dried tomato jar for extra flavor. Grate your own Parmesan for a smoother sauce.
