A refreshing, easy-to-make summer cocktail featuring fresh watermelon, mint, vodka, and spicy ginger beer. This drink requires no muddling and comes together in under 10 minutes.


Ingredients

  • 4 cups cubed fresh watermelon (about 900g)
  • 1 large bunch fresh mint leaves (about 1/2 cup packed)
  • 2 oz (60ml) vodka per drink
  • 1/2 oz (15ml) fresh lime juice per drink
  • 46 oz (120-180ml) ginger beer per drink
  • Ice
  • Optional garnish: Extra mint sprig, lime wheel, or watermelon cube

Instructions

  1. Cut the watermelon in half, scoop out the flesh, and chop into cubes. Place about 4 cups of cubes into a blender.
  2. Blend the watermelon until completely smooth. Strain the puree through a fine-mesh sieve to remove seeds and pulp for a smoother drink (optional but recommended).
  3. Place fresh mint leaves at the bottom of a copper mug or glass.
  4. In a cocktail shaker or mason jar, combine vodka and fresh lime juice. Add ice and shake vigorously for 10 seconds.
  5. Fill the mug or glass with fresh ice.
  6. Pour the vodka-lime mixture over the ice.
  7. Top with ginger beer, leaving about an inch of space at the top.
  8. Gently stir to mix. Garnish with a mint sprig and lime wheel. Serve immediately.

Notes

Do not blend the mint with the watermelon as it can turn bitter. Use fresh lime juice instead of bottled for better flavor. Ginger beer is essential for the authentic Moscow Mule taste; ginger ale is too sweet. For a batch ahead, mix watermelon juice, vodka, and lime juice in a pitcher and store in the fridge, adding ginger beer only at serving time to keep carbonation crisp.
