  • 1 teaspoon smoked paprika
  • 1 teaspoon black pepper
  • 0.5 teaspoon salt (adjust to taste based on sausage sodium)

Instructions

  1. Preheat oven to 400°F (200°C). Line a large 18×13 inch sheet pan with parchment paper or aluminum foil.
  2. Wash and chop root vegetables into uniform 1-inch chunks. Halve Brussels sprouts or chop broccoli into bite-sized florets. Chop onion into large chunks.
  3. Slice sausage links into thick coins (about half an inch thick). Toss sausage slices in a bowl with a little oil and dried herbs.
  4. In a large bowl, toss chopped vegetables with olive oil, minced garlic, smoked paprika, black pepper, and salt until evenly coated.
  5. Spread vegetables in a single layer on the prepared sheet pan, ensuring they are not crowded to allow for roasting rather than steaming.
  6. Roast vegetables in the preheated oven for 20 minutes.
  7. Remove pan from oven. Push vegetables to the sides to create space in the center. Arrange sausage slices in the center.
  8. Return pan to oven and roast for another 15 minutes, or until sausage is browned and crispy, and vegetables are tender and caramelized.
  9. Optional: Broil for the last 2 minutes for extra crispiness, watching closely to prevent burning.
  10. Serve immediately, optionally garnished with fresh parsley.
