  • 4 cups low-sodium vegetable broth
  • ½ cup heavy cream

  • 1 teaspoon salt (or to taste)
  • ½ teaspoon black pepper (or to taste)

Instructions

  1. Preheat oven to 400°F (200°C). Toss squash cubes with 1 tablespoon olive oil, salt, and pepper. Spread in a single layer on a parchment-lined baking sheet and roast for 25-30 minutes until tender and caramelized.
  2. While squash roasts, melt butter in a large Dutch oven or heavy-bottomed pot over medium heat. Add diced onion and cook for 3-4 minutes until soft. Add garlic and cook for 1 minute until fragrant.
  3. Add roasted squash and any pan juices to the pot. Pour in vegetable broth, scraping up browned bits from the bottom. Bring to a boil, then reduce heat to low, cover, and simmer for 10-15 minutes.
