Instructions
- Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper.
- Pat salmon fillets dry with paper towels to ensure crispiness.
- Cut salmon into 1-inch cubes and place in a large bowl.
- Sprinkle cornstarch, salt, and black pepper over the salmon. Toss gently until pieces are lightly coated and look dusty.
- Drizzle neutral oil over the salmon and toss again to help the cornstarch adhere.
- In a small bowl, whisk together Sriracha, hot honey, rice vinegar, soy sauce, minced garlic, and grated ginger until smooth.
- Arrange salmon bites in a single layer on the prepared baking sheet, ensuring they are not touching.
- Bake for 10-12 minutes until salmon is opaque and flakes easily with a fork.
- Remove from oven and brush a generous layer of the honey Sriracha glaze over each bite.
- Switch oven to Broil (high). Return to oven and broil for 2-3 minutes, watching closely, until glaze bubbles and caramelizes.
- Remove from oven, sprinkle with sliced green onions and sesame seeds if desired, and serve immediately.
Notes
Pat the salmon dry before coating to ensure crispiness. Do not overcrowd the pan, as this causes steaming instead of baking. Watch the broiler closely as the sugar in the honey can burn quickly. For a gluten-free version, use tamari instead of soy sauce. This recipe is also dairy-free.
