  • ½ cup (50g) unsweetened cocoa powder
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 package (about 36 cookies) Oreo cookies
  • 1 cup (170g) semi-sweet or dark chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×9 inch baking pan with parchment paper, leaving an overhang on the sides, and lightly grease.
  2. Melt the butter in a microwave-safe bowl or saucepan and let it cool slightly until warm but not hot.
  3. In a large bowl, whisk together the melted butter, granulated sugar, and brown sugar until well combined.
  4. Add the eggs and vanilla extract, whisking vigorously for 1-2 minutes to incorporate the sugar for the crackly top.
  5. Stir in the flour, cocoa powder, baking powder, and salt until just combined. Do not overmix.
  6. Crush about 12 Oreo cookies into small chunks and fold them into the batter along with the chocolate chips.
  7. Transfer the batter to the prepared pan and press down firmly to create an even layer.
  8. Arrange remaining crushed Oreos on top of the batter and sprinkle with extra crushed Oreos for garnish.
  9. Bake for 25-30 minutes, or until edges are set and the center is slightly soft. A toothpick should come out with moist crumbs.
  10. Cool completely in the pan for at least 30 minutes, then lift out using the parchment overhang and cool on a wire rack before cutting.
