Description
A quick and elegant weeknight dinner featuring wild-caught salmon and roasted asparagus topped with a rich garlic butter sauce. Ready in just 15 minutes with minimal cleanup.

- 4 salmon fillets (about 6 oz each)
- 1 bunch asparagus spears (about 1 lb)
- 2 tablespoons extra virgin olive oil
- 1 teaspoon garlic powder
- 1/2 teaspoon dried oregano
- Salt and black pepper to taste
- 4 tablespoons unsalted butter
- 4 cloves fresh garlic, minced
- 1 tablespoon fresh lemon juice
- 1/2 teaspoon red pepper flakes (optional)
- 2 tablespoons fresh parsley, chopped
Instructions
- Preheat oven to 400°F (200°C). Line a large sheet pan with parchment paper.
- Wash and dry asparagus. Snap off tough woody ends. Toss with 1 tablespoon olive oil, salt, and pepper. Spread in a single layer on the sheet pan.
- Pat salmon fillets dry. Place skin-side down on the sheet pan next to the asparagus. Season with salt, pepper, garlic powder, and oregano. Drizzle with remaining 1 tablespoon olive oil and rub in.
- Roast in the preheated oven for 10-12 minutes, until salmon flakes easily with a fork and asparagus is tender-crisp.
- While salmon roasts, melt butter in a small skillet over medium heat. Add minced garlic and red pepper flakes. Stir constantly for 1 minute until fragrant and golden (do not burn).
- Remove skillet from heat and whisk in lemon juice until smooth.
- Remove sheet pan from oven. Spoon garlic butter sauce over salmon and asparagus. Sprinkle with fresh parsley and serve immediately.
Notes
Line the pan with parchment paper for easy cleanup and to prevent sticking. Do not overcook the salmon as it continues to cook after removal from the oven. Snap asparagus ends rather than cutting them to ensure you remove only the tough parts. For a dairy-free version, swap butter for olive oil or avocado oil.
