- 1 teaspoon pure vanilla extract
- 2 large eggs, room temperature
- 1/4 cup (60ml) milk
- 1 cup (240ml) caramel or toffee sauce

- Whipped cream or vanilla ice cream (for serving, optional)
Instructions
- Preheat oven to 350°F (175°C). Grease a 9-inch square baking pan and line the bottom with parchment paper for easy removal.
- In a large mixing bowl, mash the ripe bananas with a fork until mostly smooth with a few small chunks (about 1 1/2 cups).
- Add the melted butter, sugar, eggs, vanilla, and milk to the mashed bananas. Whisk until well combined and smooth.
- Add the self-rising flour to the wet ingredients. Gently fold in with a spatula or whisk until just combined. Do not overmix; the batter should be thick and slightly lumpy.
- Pour the batter into the prepared pan and spread evenly. Drizzle the caramel or toffee sauce over the top. Use a knife or skewer to swirl the sauce into the batter to create pockets of toffee.
- Bake for 35-40 minutes, or until the top is golden brown and a toothpick inserted into the cakey part (not the sauce) comes out clean. The edges should be bubbling.
- Let the cake cool in the pan for 10 minutes to allow the caramel to set slightly.
- Slice into squares and serve warm, topped with whipped cream or vanilla ice cream if desired.
Notes
Use very ripe, black-spotted bananas for maximum sweetness and moisture. Do not overmix the batter once flour is added to avoid a tough cake. For best texture, serve warm. Leftovers can be stored in an airtight container in the fridge for up to 3 days and reheated in the microwave for 20-30 seconds.
