Gooey Sticky Toffee Banana Pudding Cake

  • Author: Elena
  • Total Time: 50 minutes
  • Yield: 8 servings 1x

Description

A simple, one-bowl dessert that combines ripe bananas, buttery cake batter, and a gooey caramel toffee sauce. It features a crisp top, a moist middle, and a molten center, making it an easy yet impressive treat.

Ingredients

Scale
  • 3 large ripe bananas (about 300g, black-skinned)
  • 1/2 cup (115g) unsalted butter, melted
  • 3/4 cup (150g) granulated sugar
  • 1 cup (125g) self-rising flour (or 1 cup all-purpose flour + 1 1/2 tsp baking powder + 1/4 tsp salt)
  • 1 teaspoon pure vanilla extract
  • 2 large eggs, room temperature
  • 1/4 cup (60ml) milk
  • 1 cup (240ml) caramel or toffee sauce
  • Pinch of salt (if using unsalted butter and all-purpose flour)
  • Whipped cream or vanilla ice cream (for serving, optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9-inch square baking pan and line the bottom with parchment paper for easy removal.
  2. In a large mixing bowl, mash the ripe bananas with a fork until mostly smooth with a few small chunks (about 1 1/2 cups).
  3. Add the melted butter, sugar, eggs, vanilla, and milk to the mashed bananas. Whisk until well combined and smooth.
  4. Add the self-rising flour to the wet ingredients. Gently fold in with a spatula or whisk until just combined. Do not overmix; the batter should be thick and slightly lumpy.
  5. Pour the batter into the prepared pan and spread evenly. Drizzle the caramel or toffee sauce over the top. Use a knife or skewer to swirl the sauce into the batter to create pockets of toffee.
  6. Bake for 35-40 minutes, or until the top is golden brown and a toothpick inserted into the cakey part (not the sauce) comes out clean. The edges should be bubbling.
  7. Let the cake cool in the pan for 10 minutes to allow the caramel to set slightly.
  8. Slice into squares and serve warm, topped with whipped cream or vanilla ice cream if desired.

Notes

Use very ripe, black-spotted bananas for maximum sweetness and moisture. Do not overmix the batter once flour is added to avoid a tough cake. For best texture, serve warm. Leftovers can be stored in an airtight container in the fridge for up to 3 days and reheated in the microwave for 20-30 seconds.
