A no-bake, ultra-creamy dessert made with just a few pantry staples. This light and airy cherry cheesecake fluff is layered with graham cracker crumbs and cherry pie filling, ready in minutes and perfect for last-minute cravings.


Ingredients

  • 8 oz (225g) full-fat cream cheese, softened
  • 1/2 cup (100g) granulated sugar
  • 1 teaspoon vanilla extract
  • 8 oz (225g) whipped topping, thawed
  • 21 oz (600g) can cherry pie filling
  • 1 sleeve (about 24 sheets) graham crackers
  • 3 tablespoons unsalted butter, melted
  • Pinch of sea salt (optional)

Instructions

  1. Place graham crackers in a ziplock bag and crush into a mix of fine crumbs and small chunks using a rolling pin.
  2. Melt the butter in the microwave and pour it over the crushed graham crackers. Mix until the crumbs resemble wet sand. Set aside.
  3. In a large mixing bowl, beat the softened cream cheese and sugar on medium-high speed for 2-3 minutes until completely smooth. Scrape down the sides of the bowl.
  4. Add the vanilla extract and mix for another 30 seconds.
  5. Gently fold the thawed whipped topping into the cream cheese mixture using a rubber spatula until no streaks remain. Be careful not to deflate the air.
  6. Spoon about 1 tablespoon of the graham cracker mixture into the bottom of each ramekin or cup and press down lightly.
  7. Add a spoonful of cherry pie filling to the bottom of each cup.
  8. Top with a generous scoop of the cheesecake fluff mixture, filling almost to the top.
  9. Add another spoonful of cherry pie filling on top of the fluff.
  10. Sprinkle the remaining graham cracker crumbs over the top.
  11. Chill in the refrigerator for at least 2 hours, or overnight for best results.

Notes

Do not use low-fat cream cheese as it will not set properly. Ensure the whipped topping is fully thawed but still cold to maintain the airy texture. For best results, chill overnight to allow flavors to meld. Do not freeze, as the whipped topping may separate.
